Peach Salsa Salad


I’m gathering an arsenal of recipes that I can make in a minimal amount of time with a minimal amount of money.

First recipe in my Under 5 (as in under 5 dollars) Cookbook is Peach Salsa Salad.

I first made this during the Summer of Peaches. Jochiwon is famous for peaches, so I bought and ate, together with my friend S, over 50 peaches in the course of the summer.

We had to get a little bit creative with our peach creations. Some of the dishes we made included peach cobbler, peach blintzes, peach spring rolls, peach salsa tacos, and peaches and cream popsicles.

My favorite recipe was the peach salsa because of it’s simplicity. It can be eaten as a salsa or a salad on it’s own.

Peach Salsa Salad
Prep time: 5-10 minutes Cost: 2,000 won Servings: 2-3

2 peaches
2 cucumbers
2 bell peppers

1 lime or lemon
pinch of salt
pinch of chopped garlic
pinch of parsley or basil or fresh cilantro

1)Chop the cucumbers, peaches, and bell peppers. The best ratio of the veggies is one to one. You can also add other fruit or veggies. Some onion or jalapeño could spice it up more.
2)Throw everything in a bowl.
3) In a separate bowl squeeze the lime/lemon juice, stir in the seasonings, and toss over the salad.
